Prawns in batter are traditional tapas you can have in many Spanish bars. They are deep-fried prawns coated with a mixture of wheat flour and corn starch. A small part of the prawn is not battered with the mixture - which is yellow in colour, as it contains a colouring agent or saffron – so that you can handle and eat it. The name ‘gambas gabardina’ refers to a coat (‘gabardina’ in Spanish), as the prawns are actually coated.
